Steam jacketed kettles

Steam-Jacketed Kettle is very large, deep kettles mounted on a pedestal or legs to stand on the floor. There is a sealed area between the outside wall and the jacket into which steam is pumped, which does even heating and cooking of the food in the kettle. Steam, though, never touches the food. There is a faucet at the bottom to allow liquid to come out of its spout. Some Steam-Jacketed Kettles can also be tilted and have stirrer mounted vertically with a gearbox and motor.
